The app is very good at narrowing down what a piece is likely to be and roughly what it is worth, which is usually enough to decide whether something is worth taking to a jeweller. For insurance, resale at scale or anything legally binding, get a professional appraisal.

The estimate combines the identified metal and the estimated purity with current precious-metal market prices. Because spot prices move constantly, the figure you see is a snapshot at the time of the scan.
